Chuck travels to Odanak to learn everything there is to know about the fish that stands as the symbol of the community: the sturgeon. He meets Luc Nolett, the community’s sturgeon master who is in charge of smoking the fish for Odanak’s pow-wows and community events. They take a boat to Lake St-Pierre and fish two huge sturgeons that they take to Luc’s house. Luc cleans and filets the fish and to Chuck’s surprise he puts together the smoker he built himself in his backyard. Luc starts the smoking process and Chuck makes a wild rice salad to accompany the savory fish. As he tastes the final result, Chuck clearly understands why no pow wow is complete without this smoked delicacy.
