Bannock Apple Turnovers
Ingredients
Bannock Dough
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon kosher salt
- ¼ cup cold butter, cubed
- ¾ cup milk
Apple Filling
- 1 tablespoon butter
- 3 medium golden delicious apples, peeled, cored, and diced
- ¼ cup sugar
- 1 teaspoon cinnamon
- 1 teaspoon lemon juice
- 1 tablespoon maple syrup
Assembly
- 1 large egg + 1 tablespoon milk, beaten for brushing
- ¼ cup turbinado sugar
Instructions
Prepare the Dough
- In a large mixing bowl, whisk together the flour, baking powder, and salt. Add the butter and, using your fingers, pinch into the flour until the mixture resembles coarse crumbs.
- Pour in the milk gradually, and gently stir until the dough comes together.
- Turn the dough out onto a lightly floured work surface and gently knead a few times.
- Shape it into a rectangle about 1/2 inch thick, wrap it in plastic, and set aside in the refrigerator until ready to use.
Make the Apple Filling
- In a medium pot, melt the butter over medium-high heat.
- Once the butter is hot, add the diced apples, sugar, cinnamon, lemon juice, and maple syrup.
- Cook for about 5-7 minutes, stirring occasionally, until the apples soften and any liquid is evaporated. The apples should be tender but not mushy.
- Remove from heat and let it cool slightly.
Assemble the Turnovers
- Preheat your oven to 400°F. Remove the dough from the fridge. If it has been in there longer than 20 minutes, let it rest and warm up slightly.
- Roll out the dough on a floured surface to about ¼ inch thick.
- Cut the dough into squares, about 4 inches by 4 inches.
- Place a generous spoonful of the cooked apple filling in the center of each square being careful not to overfill.
- Fold the dough over to create a triangle, pressing the edges to seal and crimp the edges using a fork.
- Place the turnovers on a baking sheet lined with parchment paper.
- Brush the tops of the turnovers with a little of the egg and milk mixture.
- Sprinkle each turnover with a bit of turbinado sugar.
- Bake for 20-25 minutes, or until the turnovers are golden brown and puffed.
