Bannock Apple Turnovers

Ingredients

Bannock Dough

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon kosher salt
  • ¼ cup cold butter, cubed
  • ¾ cup milk

Apple Filling

  • 1 tablespoon butter
  • 3 medium golden delicious apples, peeled, cored, and diced
  • ¼ cup sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon lemon juice
  • 1 tablespoon maple syrup

Assembly

  • 1 large egg + 1 tablespoon milk, beaten for brushing
  • ¼ cup turbinado sugar

Instructions

Prepare the Dough

  1. In a large mixing bowl, whisk together the flour, baking powder, and salt. Add the butter and, using your fingers, pinch into the flour until the mixture resembles coarse crumbs.
  2. Pour in the milk gradually, and gently stir until the dough comes together.
  3. Turn the dough out onto a lightly floured work surface and gently knead a few times.
  4. Shape it into a rectangle about 1/2 inch thick, wrap it in plastic, and set aside in the refrigerator until ready to use.

Make the Apple Filling

  1. In a medium pot, melt the butter over medium-high heat.
  2. Once the butter is hot, add the diced apples, sugar, cinnamon, lemon juice, and maple syrup.
  3. Cook for about 5-7 minutes, stirring occasionally, until the apples soften and any liquid is evaporated. The apples should be tender but not mushy.
  4. Remove from heat and let it cool slightly.

Assemble the Turnovers

  1. Preheat your oven to 400°F. Remove the dough from the fridge. If it has been in there longer than 20 minutes, let it rest and warm up slightly.
  2. Roll out the dough on a floured surface to about ¼ inch thick.
  3. Cut the dough into squares, about 4 inches by 4 inches.
  4. Place a generous spoonful of the cooked apple filling in the center of each square being careful not to overfill.
  5. Fold the dough over to create a triangle, pressing the edges to seal and crimp the edges using a fork.
  6. Place the turnovers on a baking sheet lined with parchment paper.
  7. Brush the tops of the turnovers with a little of the egg and milk mixture.
  8. Sprinkle each turnover with a bit of turbinado sugar.
  9. Bake for 20-25 minutes, or until the turnovers are golden brown and puffed.
