Oyster Po' Boys with Old Bay Mayonnaise

Ingredients

Old Bay Mayonnaise

  • ½ cup mayonnaise
  • 1 tablespoon Old Bay seasoning
  • Pepper
  • ½ teaspoon lemon juice

Fried Oysters

  • 16 freshly shucked oysters
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1 tablespoon Old Bay seasoning
  • 1 teaspoon kosher salt
  • 1 litre vegetable oil for frying

Sandwiches

  • 2 hoagie rolls
  • 1 cup shredded iceberg lettuce
  • Fried oysters
  • Old Bay mayonnaise
  • Hot Sauce

Instructions

Prepare the Old Bay Mayonnaise

  1. In a medium bowl, combine the mayonnaise, Old Bay seasoning, pepper, and lemon juice. Mix well then set this aside in the refrigerator for at least 30 minutes before using.

Fry the Oysters

  1. Place the oysters in a small bowl and add the buttermilk. Set aside for 15 minutes to soak. In a separate medium bowl, whisk together the flour, cornmeal, Old Bay, and salt.
  2. Add the vegetable oil to a large pot and heat to 350°F using a thermometer to check the temperature. Once the oil is hot, take each oyster from the buttermilk, letting any excess drip off, and toss it in the flour mixture until well coated.
  3. Carefully place the coated oysters in the hot oil, frying them in batches to avoid overcrowding. Fry for about 2-3 minutes until they’re golden brown and crispy.
  4. Once done, transfer them to a paper towel-lined plate to soak up any excess oil. Lightly season with a bit of salt.

Assemble the Sandwich

  1. Slice the hoagie rolls lengthwise across the top, but not all the way through, leaving a fold.
  2. Add the shredded lettuce, top with the fried oysters, drizzle the mayonnaise all over and finish with your favorite hot sauce.
