Boiled “blood pudding-style” cake

Ingredients

  • 3 cups of flour 
  • 1 teaspoon of cinnamon  
  • 3 teaspoons of baking powder  
  • 2 tablespoons of salt 
  • 1 teaspoon of ginger  
  • ¼ teaspoon of cloves
  • ¼ teaspoon of nutmeg  
  • ¾ cup of molasses  
  • ¾ cup of raisins 
  • 2 cups of brown sugar 
  • 2 cups of water 

Instructions

  1. In a pan, cook the brown sugar in water until it attains a black caramel consistency. 
  2. Carefully add water to the caramel.
  3. Once well mixed, add molasses.
  4. Mix the flour, brown sugar, baking powder, salt, cinnamon, ginger,  nutmeg, cloves and raisins together in a large bowl.
  5. Once well mixed, stir in the butter with a spoon.
  6. Add the caramel and mix well.
  7. Put the mix inside a clean pillow case and place it in boiling water.
  8. Cook for 2 hours.
  9. Serve with a cream-based icing and a dash of cinnamon.
